The Godfather of Aussie whisky, Bill Lark and Lark Head Distiller Chris Thomson have one more surprise for the Club - the Head Distiller’s Release Second Edition, Finished in Sparkling Wine Casks.
Crisp, creamy and mouth-wateringly fruity, Chris has perfected an extremely rare cask finish, expertly matching Lark’s deliciously thick, sweet spirit with the fresh, dry, fruitiness of Tasmania’s finest sparkling wines. This will undoubtedly become our Members’ whisky of the year.
Perfectly weighted at 48%ABV it’s an explosion of white fruit and vanilla on the Nose, toasted oak and viscous layers of grape, peach and apple on the Palate, and Finishing long, almost bubbly and effervescent, with hints of buttery caramel and spiced fruit.
